Back in October 2019, we collaborated with English Sparkling Wine Producer, Wiston Estate, to produce 2 5-course Wine Pairing Dinners in their vineyard to celebrate their 2019 Harvest. Each dish was paired with Wiston’s outstanding English Sparkling wines and we used many ingredients from the estate including apples, Jerusalem artichokes, pumpkins and pheasants.
Sussex is such an amazing county for producing an abundance of incredible ingredients from the sea, land and sky. We feel so fortunate to be able to work closely with many of the growers, producers and fishermen to source them. This dinner was the perfect culmination of this because, apart from amazing truffles from Wiltshire and delicious West Country mussels, all the ingredients came from within our county boarders.
